Growing up, I watched G Gundam which represented a handful of countries with a (subjectively silly) mobile suit design featuring stereotypes of that country. I would say these Olympic designs are better.
I haven't read or seen it but I think Hetalia: Axis Powers also anthropomorphizes countries. I'm sure there are other manga/anime that do the same, but I'm not able to recall them at the moment.
