Love a good Alex video, and I'm liking this pasta series he's been doing. I like doing quick Italian pasta dishes for dinner sometimes since they're mostly pantry based things and very quick but feels classy, yet it always feels like there's a ton of room for improvement in my technique to get anywhere near mastery.
I love the look the guy gives him at the end when he asks about doing this at home, I don't think it's going to stop him and I can't wait to see how he does.

He’s done some impressive dried pasta in the past, in his ramen series - I wouldn’t put it past him to produce something decent.
