    Rasmus Munk is a goddamn genius. He's only 31 too! Alchemist has been at the top of my list of restaurant wants since I heard about the first one.

    Relevant to the post about noma the other day, it's interesting that in the same city Munk manages to treat his staff much better, with good pay and reasonable hours, but for Redzepi that wasn't possible. Alchemist do charge more per head though.
