It's kinda annoying to go somewhere to shop or run errands, and then either need to eat a hamburger or some shitty sandwhich, or alternatively go sit down and spend 45min to wait for a "proper" meal.

I agree. I've actually been fantasizing about creating that kind of restaruant. I want to run something that's either like a cafeteria (like the IKEA does) or to go a little further and revive the automat concept. I'd want it to serve mostly if not entirely vegan fare. Vegan restaurants are not that terribly rare where I live - relatively, at least - but most of them serve really rich and greasy food. I want something that's not so much a special treat and more sustenance.
Sadly, I don't think there would be enough customers to sustain that kind of business. The reason why restaurants have such unhealthy food is because it sells, and a restaurant that doesn't compete with that is a restaurant that fails.
I live in the Los Angeles metropolitan area, which is approximately 95% suburb. Cafeterias only really work in areas with really heavy foot traffic, which is part of why IKEA restaurants operate...

I figure if I were to do this concept it would have to be in upscale highly urban areas where Sweetgreen locations operate, and I'm not sure they're all that profitable (though to be fair it's largely because of their crazy business model). I don't have enough money to start even a suburban business right now.
If I were to start a restaurant it would probably have to be a food truck, but I don't want to do that simply because I don't want to have to operate a restaurant that cooks all or most of it's food with fossil fuels.

Fast causal like Sweetgreen seems to be doing well, but it’s definitely in a more premium market segment
