This article lays out why ACA specifically isn't a risk, and the guardian seems to have just parroted the food babe's propaganda wholesale.

Honestly I basically tuned out after I heard the name "Food Babe". She's really not a reliable source of information that anyone should follow.

One thing that I have done this year is start making my own bread every week. Earlier this year I went to Savers (a thrift mega-store) and purchased a well-reviewed bread machine for $10. Since then I have always had freshly sliced bread since you simply add the ingredients, press start, and it does all the kneading, rising, and baking in one container. Its honestly been one of the best purchases in a long time due to the cost savings and knowing what is going into my bread.

The one downside though is that a loaf of bread will typically last ~5 days. After that maybe if I'm lucky. While a loaf from the grocery store seems to last well over two weeks in the right storage conditions.

One of those is sodium acetate which is the reaction product of vinegar and sodium hydroxide, l guess you could buy a bag of the sodium acetate and put a little bit in your bread. It tastes a little acidic but also slightly salty and sweet as well so in tiny concentrations you probably won't notice.

You could always freeze half the loaf, or just make the smallest one you can. Or eat more bread! How does a loaf last you two weeks anyway?! :D Having said that, I will now get my bread machine...

Having said that, I will now get my bread machine out and start using it again. I forget why I stopped. There's nothing like fresh, warm bread.

Edit: There, one two-pound white/whole wheat loaf incoming in 3.5 hours.

Bread is actually way worse for your health than most people realize. Your standard (tiny!) American-style sandwich bread will generally have at least 100 calories per slice, whereas 'deluxe' versions can have 130+ calories. That wouldn't be too terribly bad by itself, but unfortunately it's almost entirely in the form of carbohydrates.

I'm yet to be convinced that the source of calories is significant as long as the overall intake is kept the same, but I can sure as hell say I was surprised when I realised how much more of a rice-based dish you can get for the same calorie count as a sandwich!

Mmm, I just ate half a slice of delicious, calorie-laden warm bread.
