    I recently had the Beyond Burger at work for the first time, and I was blown away by how far ahead of other plant-based patties it was (disclaimer: I have not had the Impossible Burger, which I hear is just as good). It was certainly not indistinguishable from meat, which I suppose is the stated goal, but it was darn good in its own right and I look forward to buying more of them.

    I have recently become much more concerned with the ethics of eating meat, and while I am not fully vegetarian, I am trying to cut out meat where it makes sense to. These plant based substitutes will make that a lot easier. I am currently planning on buying the Beyond sausage and experimenting with taking it out of the casing, re seasoning it to be closer to andouille, recasing it, and making some rice and beans. Just having the option to do so finally with something better than admittedly unsatisfying bean patties and related items is exciting.

    The article briefly touches on it, but I am excited for a potential lab-grown meat revolution down the road. I would gladly pay a premium on lab grown meat if it meant having meat that was more ethically produced, both from an environmental standpoint and from an animal suffering one.
