    If the author can get all of the flours pictured at their regular grocery store, they are incredibly lucky. A guide to flours available in my local (bay area) grocery store even pre-pandemic would be much shorter, consisting of AP (bleach or unbleached), whole wheat, and bread flour sometimes.
