    Honestly, I'm kind of amazed that Serious Eats doesn't have a simple "how to use the microwave" article, because it's one of the things that I realized that practically nobody knows how to use properly.

    It dries everything out! Then cover the dish so it doesn't evaporate. If it's something especially moist like rice, add in about a teaspoon of water first.

    The outside is scalding but the inside is frozen! You're cooking the food too fast. Reduce the heat so that the inside has time to warm up and cook it for a longer period of time.

    Likewise, people tend to complain about microwave food because they didn't pay enough attention to the instruction (though to be fair, I think most of them are written incredibly poorly). If you cook at 100% power on a 1500W microwave using the time recommendation for a 1000W oven, you're going to have a bad time. Adjust the power level to match.
