Thanks for letting me know! To be honest these days I have been mostly looking into smaller indie ones that wouldn’t be in Steam (I want gay stories that are not about pretty boys). Doing a quick scan I’m not personally interested in a lot of them and won’t be buying anything because I am both out of money and will be in the process of gearing up for college classes soon. The one thing that interests me that I haven’t heard of is Bewitching Sinners, and to be honest it’s almost entirely for how good the art looks!
That being said, there are some classic recommendations to be made, like the Danganronpa and Zero Escape series. I will never stop recommending Yu-No, currently on sale for $9.99. If you want something more novel and less visual, Analogue: a Hate Story is really really good (as long as you’re ok with nonlinear storytelling), and so is its sequel Hate Plus.
While I haven’t played these, both Muv-luv Alternative and The House in Fata Morgana are legendary and have been in my “I’ll get around to them eventually” pile forever.
If you want a really divisive title, You should really play Song of Saya. The version sold on Steam is censored and there’s a good chance you will still be upset it wasn’t censored more. Even if you are a die-hard pervert you probably don’t want to experience the missing content. Personally, I think it’s better without it. The story will disgust you, but it will challenge you with complex subjects to think about and in some ways it’s actually one of the most beautiful things out there. It’s something I would recommend… well after you finish reading the content warnings and decide if you could handle it first.
But honestly, the best way to pick a visual novel is usually to pick them with the same criteria you would a book. Read the synopsis and see if the story seems interesting to you. You don’t always read masterpieces, do you?
Jesus Christ I'm surprised any version of Song of Saya is on Steam, though I only tried going in blind to the uncensored version some 15 years ago and intensely regret it. Dropped it where you'd imagine, so I probably missed the good parts.

Might try and pick up Scarlet Hollow and/or Until Then, not too sure if I will because I've been looking at Wanderstop and Split fiction in the next two weeks, but both of those games are on my wishlist
I don't play many visual novels, but you just reminded me to check if the sequel to VA-11 Hall-A, which was in development years ago, has come out... Apparently it's not coming out anytime soon, and probably abandonware at this point. Sad. I do recommend the original game though, I enjoyed it a lot and it appears to be 33% off (at least in my region).
Vaporware is the word you're looking for with projects stuck in development hell. Abandonware is when it comes out, support and/or licensing are ignored for years, and gray morality piracy or community support become the means of distribution.
