    As someone who's been working in hospital systems for some time now, there's been a push in the last 5-10 years to get better food. I'm not sure if it's because American culinary needs have been changing, because there are often restaurants and fast food places located near hospitals, or some other reason, but hospitals are aware. In fact, most of them have a plan in place to improve the food they serve.

    Hopefully this will just be one of the many things that become ubiquitous eventually (they make so much money already, why the hell is it so hard to serve food that doesn't suck?).

    I think a major contributor to this push has been a push for customer satisfaction because patients are shopping around more than ever now. Most hospitals (and clinics) have satisfaction surveys nowadays, and you know people are going to put "shit food" in the comment section if they're dissatisfied.

      I've never had bad food at a hospital before. The worst thing I have come across at a hospital was a hamburger that was undersalted, but that kind of fluke can happen anywhere. Sure, many offerings are bland by nature, but there is almost always at least a few dishes that are rich in flavor. The last time I ate hospital food I got a pretty decent Chili Verde. I actually like going to the cafeteria when I am at the hospital for minor checkups just because it's easier to find a balanced meal there without the temptations of salty sweet calorie bombs they offer at fast food places.

      At the same time, I haven't been at a hospital with an issue that restricted my diet, so I can see how the restricted choices may lead to food options without the proper thought given to their palatability.

    My wife has been going through preventative chemotherapy after undergoing a mastectomy for breast cancer, and while she isn't nearly as badly off as the husband in the article, I've had to find ways to make good, palatable food for her. One can only eat so much chicken-flavored ramen or toast topped with melted cheddar cheese. I'm just glad I made a point of buying Julia Child's cookbooks as a young bachelor.
