As for fitness/nutrients, if they wanted to by sneaky and baby step their way into making it a bit more healthy, chickpea pasta is surprisingly really good, and I've made a butternut squash version of mac n' cheese or a pumpkin version of mac n' cheese that were both delicious af (albeit a bit harder to make).
...also I do not judge whatsoever, I could easily see myself eating mac n' cheese every day, every meal, but I gotta have my toasted & seasoned breadcrumbs on there. In fact there's a lunch spot not too far from my work that raised the bar enough that I won't settle for anyplace else.
