There's also a recorder built in to Windows that's on the much, much simpler end of things.

Audacity should be simple enough. The only thing to note I can think of is OP will need to use "export audio" to make an mp3 etc.
It’s been a while since I’ve used it, but iirc, there is an export item in the file menu.I just realized you weren’t asking if the export feature exists.
