A key feature of Signal for me is its SMS integration (on Android, at least). This means its effectively a drop in replacement for the SMS app you currently have, so you can use it and get used to the interface right away with the contacts you already have without waiting for someone else to join, and you don't have to have another app on your home screen.

Then, when someone in your contacts starts using Signal too, your conversation with them will start using encrypted Signal messages. You can switch between the two by holding the send button.

I think it's one of the easiest switches of messaging apps you can do, and it might be a bit more of a convincing replacement for some. (of course, you'll have to keep mobile data always on now if you weren't already)
