What creative projects have you been working on?

Kinda a vent but also asking for advice.
I'm debating making a gaming YouTube channel. One of the series I thought of is to create edited playthroughs similar to Civvie 11 or Indeimaus with titles like "RUSSIAN BOOTLEG BIOSHOCK" (Atomic Heart) or "FRENCH BOOTLEG DIABLO" (Wolcen) to play through and review games that are heavily inspired by hit franchises. I'd heavily play into the joke that a lot of the games I'd play through would be too good to be considered bootlegs.
(Genshin Impact was the main game that inspired this idea but that's a video I won't do.)
My main worry is not a fear of failure but a fear of notoriety.
Because I was a bit of an eejit growing up, I used a recognisable username on YT and Reddit which can somewhat easily be tied to my IRL identity (it's not my username on here.)
And throughout my time on Reddit I've definitely made controversial comments over the years, ones that make me worried I'll get famous, anger the wrong person, have them dig up posts I made a decade ago James Gunn style or end up doxxing me.
What's the best way I can keep anonymity when making this channel? I obvs don't intend to show my face, and if I do by some miraculous miracle end up growing to mainstream levels, my intent is to just make a lot of money short term until I can invest and live off interest, then retire.
If I'm doing Blizzard or Xbox stuff I also intend to get a gamertag/BNET ID change if that's what it takes.
I don't particularly want to be famous. But I need a side project to get my mind off my bad job.
