This is a pretty in depth article about how the California dairy industry is consolidating due to environmental challenges. They claim this leads to large methane emissions which might be true. But I imagine capturing those methane emissions is easier when dealing with a large mega-corp with capital rather than many small farms.
Either way, I bet environmental challenges will lead to consolidation in more than just the Dairy industry.

Thanks for the article. If anyone wants to read a readable history of water diversion in the western US, I recommend Cadillac Desert. https://www.goodreads.com/book/show/56140.Cadillac_Desert?ac=1&from_search=true&qid=rL6uFgehEH&rank=1
