What creative projects have you been working on?

I've been trying to puzzle out how to make a soft center in a chocolate truffle the last few weeks. The obvious solution is to use jam. These can be very tasty, but need to be refrigerated for decent shelf life. I recently learned about invertase which should allow for a candy style center that then "melts" over time. The invertase is supposed to convert the sugar crystals into liquid glucose over a few days. Currently I'm trying to be patient as I wait to see if this attempt will shift the way I want it to.
If anyone has experience making chocolates, I'd love to pick your brain. I haven't had much luck searching online.
