Two things I've made recently (and one that was made for me) that I want to talk about:

    • Cucumber Salad
    • Homemade Hamburger Helper
    • Hamburger Bowl

    Cucumber Salad

Dish that's near and dear to my heart, my Mom makes an absolutely fantastic version of this that reminds me of my childhood. I didn't make that however, I went with an off-the-cuff recipe that has an "asian twist" to it. Thinly sliced english cucumbers (or in my case, homegrown ones that my friends gave me), rice vinegar, salt, pepper, thinly sliced red onion, and thinly sliced carrots, a little bit of sugar to cut the vinegar, and topped with toasted sesame seeds. What you get is a light, flavorful, palette cleanser which tastes delicious and has the flavor evolve the longer it sits. I had previously tried a version that I added soy sauce and sesame oil to which was, frankly, terrible. The ratios were off, so I'm not saying it couldn't be good, but what I made definitely wasn't.

    Hamburger Helper

Another nostalgic meal from my childhood, I thought about it earlier this week and decided I wanted some. Ground beef (or deer meat in my case), chopped onion, tomato paste, beef stock, salt, pepper, garlic powder, chili powder, your choice of noodles, and a buttload of cheese to thicken it after cooking. It's a great "one pot" recipe that can come together in 30 to 45 minutes depending on if you've prepped (defrosted) the meat and onion.

    Hamburger Bowl

My brother in law has moved in with my wife and I for a bit, and we've decided to alternate cooking for family dinner on Wednesdays. This week was his turn, and as any good weightlifter would, he made a delicious meal that minimized carb intake. It's a deconstructed hamburger in a bowl instead of on a bun, essentially. Ground Beef, some beans, chopped-(lettuce, onions, pickles), and a homemade "Big Mac" sauce that I think was: Mayo, Salt, Pepper, Ketchup, Mustard, and Paprika. They (he and his girlfriend) made sweet potato fries as a side which turned out fantastic as well. Great dinner, making me hungry again just thinking about it!
