    My wife is vegetarian, so we've never made turkey for our Thanksgiving meal. Our go-to centerpiece has become the autumn millet bake from Mark Bittman's How to Cook Everything Vegetarian (which I highly recommend in general as an introductory/reference cookbook for vegetarian cooking). We use butternut squash and hazelnuts instead of pepitas. The richness of the toasted millet along with the sweetness of the squash and nuts and tart cranberries is a great combination.
