After two weeks of back-to-back (amazing) fajitas as our weekly meal prep we pivoted to something simpler with a pork loin, potatoes, and roasted green beans for this past week's lunches and it was just a disappointment. Was a new recipe that just didn't have very strong flavors, not bad, just more a dinner night with people that aren't adventurous sort of taste that was ultimately disappointing. This week we're being lazy and just making sandwiches for ourselves each day. Kinda a reset week.
However this weekend finally had a chance to stop at what I'll refer to as trailer BBQ. For those not in Texas/the south it's not uncommon for you to be driving around and just see a guy on the side of the road or in a parking lot with a truck and a big smoker on a trailer, slinging barbecue. I've seen my local trailer BBQ guy, who I now know is Dave, several times, but have always been on the way to or back from something that doesn't fit into stopping for BBQ. Of the few times where it wouldn't interfere with what I had going on, I never had cash on me. Yesterday I was out with my wife, just planning to get some coffee from our local spot and everything fit except for the cash part, but she and I have discussed the trailer BBQ enough times while passing it that we decided to pull over and ask if he took cashapp as otherwise we'd go to an ATM. Turns out he'd downloaded cashapp a month prior, so we were on for some BBQ without needing to find an ATM! Met him and his wife, whose name I didn't get, and talked a bit. Suggested a great catfish place down the road to her (and they make damn good spicy catfish, plus boudin balls and crab cakes that are awesome), found out he's a painter by trade and tries to be out with his trailer on weekends the weather allows, but has been working a lot of Saturdays lately so only been out on Sunday.
My wife got a chopped beef sandwich (white bread, chopped brisket, sauce, pickles, onions) that she said was perfect. Just the right ratio of beef to bread so that the sandwich didn't just fall apart and she didn't end up wanting more meat. I got a combo plate with brisket, smoked sausage, ribs, beans, and potato salad. Beans were a little sweet for my tastes, but solved that with some Cholula; potato salad was darn good. My brisket is much better on it's own, but his works well for sandwiches. However, the smoked sausage and ribs were amazing! I am envious of this man's ribs. When I smoke ribs they're good and everyone seems to enjoy them, but these just had a whole new level of flavor. Next week I think I'm going to swing by again to get some hot links and more ribs.
