Is there a model of computer mouse that will let you easily open it up to clean it OR
is designed so dust, etc will not get in?
Preferably a USB mouse as it has to become part of an existing KVM set up.

I can speak to this; I work in IT, and deal with hundreds of mice. Being able to open a mouse to clean it just doesn't matter any more; everything is optical, with no internal moving parts to get gummed up. Scroll wheels will age out from use, but I haven't seen one lost to crud in years.
You can get sealed mice for industrial uses, but they're kind of shitty as mice, they cost 10x what a regular mouse goes for, and they don't last anywhere near 10x as long. You're better off just using regular mice and replacing them slightly more often. I have regular mice on the floor in furniture shops that have a ton of wood dust, and they're fine, and have been for years.
There is always the ploopy mouse as an option.
but as others have asked; do you really need that as a feature? For the vast majority of users the need to clean a mouse is a very rare event, if ever.
Personally I'd prefer a trackpad on a KVM setup, no moving parts and nowhere for dust to ingress.
You'll want an IP6* mouse. They're not going to look or feel that good, but they are designed not to have any means of ingress.
