Zebulon I think it's less that they're overall super popular and more that they're disproportionately used by moderators and power users. I would bet 3rd party app usage is directly correlated with account age. Reddit is 18 years old, with a large group of users having joined during the Dig fiasco 13 years ago. The official app is only 7 years old, so anyone who joined before that likely used a 3rd party app at some point.
I also think a lot of mods are at somewhat of a tipping point. They provide a tremendous amount of free labor to reddit and in return reddit treats them like shit.
Same! I was convinced when they announced the AMA that it was going to be a false retreat, where they "apologized for the misunderstanding" and delayed the changes by a few months or something to try to get the heat to calm down. The fact that they just fully showed up and reiterated their bs was a stunning misstep to me.
