I realised that cooking is easier for me if I have some store cupboard ingredients and then I just buy the additional stuff that I need when I need it. And to have the right store cupboard ingredients it's easier (again, for me) if I focus on one style of cooking.

If I wanted to cook food from India, Bangladesh, and Pakistan I'd build up a cupboard full of spices and make use of a masala dabba. If I wanted to cook food from China, Japan, and Korea I'd have all those soy sauces and fish sauces and vinegars and rice wines.

I decided to focus on Italian cooking, partly because I'm inspired by Stanley Tucci's tv show, and partly because it's easy to get passably good results with very simple ingredients.

I'm starting with the Essentials of Italian Cooking by Marcella Hazan and Italia Squisita https://www.youtube.com/@italiasquisita for proper Italian, but also using recipes from Not Another Cooking Show (which are practical, easy to achieve, Italian American style recipes) https://www.youtube.com/@NOTANOTHERCOOKINGSHOW

I may grow herbs and tomatoes this year.
