For the coronation of Charles III we've followed the royal recommendation and made Ken Hom's coronation roasted rack of lamb lamb, with home-made fries (well... chips) and sauteed snow-peas as sides. What a nice dish !
The only thing we've modified from the original recipe was to roast it in the oven until the internal temp was satisfactory (51C) instead of blindly roasted for 30min (we have an electronic meat probe, it would be a shame not to use it).
