Greek pasta salad https://www.allrecipes.com/recipe/176650/greek-pasta-salad/ I used whole grain pasta and served with hummus and pita. Very light, bright and flavorful. Whole family liked it.

fried about 1/2 cup of rice in like 2 tbsp oil for a few minutes.

added an onion, then added water, added mixed veggies, mushrooms.

added beef broth, salt, pepper, fish sauce, soy sauce, chives, cayenne pepper.

Then added a brick of ramen noodles.

Finally added 3 eggs and stirred them in.

I find eggs a good way to add hearty protein to a meal when you don't have meat ready (I had no idea what I was making so I didn't thaw any ahead of time).

No idea what to call it but it was like some kind of savory rice porridge almost, it made two servings and I ate one after the other, and then scooped some of the remaining scraps out of the pan, it was good.

It's really nice making meals that at least start out as a soup since water is especially forgiving for cooking, as well as allowing easy tasting and adjusting of spices.
