    ...and relatively easy to grow, this hardy, drought-tolerant crop is underrated.

    Winter squashes (including pumpkin) are one of my gardening weaknesses. I get that in article, the easiness refers to the wide range of tolerable growing conditions, and probably harvesting, too, but every time I've tried to grow winter squashes, the plants have been destroyed by squash borer or squash beetles.

    On the topic, as an unsolicited cooking suggestion for pureed winter squash soup lovers: try adding in split red lentils while cooking, and before pureeing. Adds a nice creamy texture and extra nutrients, and imo doesn't impact whatever flavour profile you're going for. :)

    For environmental and food security reasons this is good news. Speaking personally, I have always loved pumpkin bread. Thanks to thai restaurants, I love pumpkin curry.
