Summer Potluck Favorites

Tags: recipes

I'm in the U.S. and Summer potluck season is upon us. What are your favorite crowd-pleasers? I recently made this Mexcian Street Corn Salad for a work event and it went over really well. That was branching out for me. I feel like I always make the same two tired potluck dishes and would love to hear yours.

For something refreshing, I like bringing watermelon salad. At the most basic level: watermelon, (heirloom) cherry tomatoes, mint, feta, salt, pepper, olive oil and sherry vinegar.

Tell me more about this mackerel and trout pate situation. Smoked, I assume? That sounds delicious.

I've never had this but it looks easy and delicious. Do you eat it with anything else like whole fruit or whipped cream, or by itself?

At a potluck I like to have chopped fruit and herbs as well as a liquid sugar of your choice (honey) so people can pump up the sweetness if they like.

I hear in Italy it's served on a type of pan like croissant which I have yet to try and have a hard time imagining.

I make banana pudding with the recipe below, except I use Nutter Butters instead of Nilla Wafers. It's a crowd pleaser. https://www.allrecipes.com/recipe/21398/banana-pudding-iv/
