    A few weeks ago at a farmers market I bought an inoculated block for $25. With very low expectations, because every attempt I make to garden ends in lots of green things dying, I was shocked when this thing grew to the size of my head.

    Yesterday I harvested it and carved a couple servings off it. Sautéed in butter with asparagus and carrot then served with pasta and fish. Yum! So tasty!

    The block should provide another fruiting, then it gets buried in my backyard where, with luck, I’ll have lion’s mane mushrooms in perpetuity.

    Summer is the season for switchel - as refreshing a beverage as there ever was, made from ingredients you may very well have available right this moment. The traditional recipe is a mixture of apple cider vinegar, ginger juice (which can easily be made by boiling sliced fresh ginger), and a sweetener - I prefer maple syrup but it's common to use honey or even molasses. This mixture is diluted with seltzer and served over ice. Tastes great and it's pretty dang easy to make.

    I recently bought a big bag of dried shiitake mushrooms and another big bag of dried wakame (seaweed).

    Now, I'm routinely making miso-mushroom soup ... white miso paste in not-quite-boiling water, plus a big pinch of wakame, and 4-6 quartered shiitakes (pre-rehydrated, 'cuz it takes hours), maybe a bit of leek or spring onion, some garlic ... as good as "real" restaurant miso.
