Not explicitly fusion food trivia, but I watched a documentary a few years ago The Search for General Tso that was ostensibly about finding where the Chinese American dish General Tso's Chicken came from and became an exploration of the the experience of Chinese immigrants in America.
Trivia part: I learned that General Tso's Chicken was actually created in Taiwan, though the American version is lighter on spice and heavier on sweetness.

Seconding the recommendation for The Search for Gerenal Tso. It was a really great documentary and, as you said, goes much deeper than just the search for the origins of a recipe. I particularly liked the Chinese-American history exploration and human interest aspect of it, especially the interviews with people like the Chinese takeout menu collector.
I watched it on Netflix a few years ago but it appears to be gone from there now. Amazon has it for $3.99 rental though and it’s well worth it at that price IMO.
