[Weekly] What'd You Munch This Week?

hey all!

i see these kinds of posts in ~music where people talk all about what they're listening to that week, what they checked out for the first time, what they really enjoyed or hated. i thought it'd be cool to do a food version!

did you try a new recipe this week? how was it?

eat at a cool new restaurant?

try a new dish that you absolutely loved / hated?

grab a plate and dive on in!

    Someone in a class I attended gave away two full boxes of pork rinds. One was plain salted, and the other was spicy. I tried spicy pork rinds before so I figured I would try the plain salted ones....

    It turns out that plain pork rinds have absolutely zero flavor.

    By the time I realized my mistake, the spicy ones were all gone.

    I made the most delicious fridge leftover salad. I boiled a few potatoes, diced them and used them as a base. I had some beets and parsnips so I peeled those, diced finely, dusted lightly with tapioca, brushed with coconut oil and baked until crispy on parchment. Then I baked some Italian sausages to render out the fat, blotted dry and cut into circles. I topped all this with a pile of arugula and whipped up a lemon and mustard vinaigrette. 10/10 would make again on purpose when not cleaning out the fridge and improvising.
