    I've been doing this ever since I bought my Instant Pot, and it's great. Veggie scraps that would normally go into compost get thrown into a gallon ziploc and into the freezer.

    Then I buy one of those grocery store rotisserie chickens, tear it apart, and toss the chicken bones into the pot with the veggie trimmings. Cook it on high pressure for the longest my pot allows (4 hours).

    Bonus protip I just figured out the last time I did this - the Instant Pot I have also has an air fryer attachment. I used that to roast the chicken bones before making the stock, and it was much easier than doing it in my full-size oven.

    A friend recently bought a compost bag (lives in an apartment) and I mentioned just making stock with the scraps and they were very annoyed with themself. I've also been doing this for a while now. It's easy enough to do, and you don't even need any special hardware (it just takes longer on the stove than in a pressure cooker in a pot). I usually make about a gallon at a time, and it'll last me for a couple of weeks (I usually use it when I make rice, or brine tofu).
