I've been working on improving my cooking skills. Saturday night I made lemon thyme slow-roasted salmon, blistered green beans, and jasmine rice. It was a big hit with the whole family. My wife has always said she's not a salmon fan, but I think this might have converted her.

Sunday night I made a quick pork chop marinade. I sort of eyeballed it using olive oil, Dijon mustard, soy sauce, honey, and red pepper flakes. Grilled the chops and some corn on the cob, and roasted some asparagus and cherry tomatoes.

All in all, I think both turned out really well. The biggest hit were the blistered green beans. I only made a pound of them and I bet we could've eaten another pound of them easily.

I'm cooking things from "Six Seasons" by Joshua McFaddon. So far, it's pretty good. The recipes are all easy to make; they've all worked so far; they're easy to convert to UK English food and measurements. A lot of it isn't strict recipe, but advice and guidance about what's in season and what it goes with.
