One turkey a year is enough for me so I think I’m going to try my hand at beef wellington this year. I’ve never cooked it myself but it seems pretty simple. This is the recipe I’m using (probably a paywall on mobile): https://cooking.nytimes.com/recipes/1020640-beef-wellington. Probably do a red wine sauce and roast brussell sprouts/beets and garlic mashed potatoes alongside but we'll see!

in addition to that NYT recipe, there's the classic Gordon Ramsey video as well as a Binging with Babish episode (with puff pastry made from scratch, no less) that you might find helpful.

I've also heard (not mentioned in these recipes) it's a good idea to include a single sheet of phyllo to prevent juices from the tenderloin getting into the puff pastry. I'm kinda tempted just to ditch the puff pastry for phyllo entirely, but not sure how hard that would be to get everything wrapped and buttered.
