Stellaris is a grand strategy game that works on high setting.
The Witcher 3 runs at medium-high settings while still looking good.
It really would help to know your preferred flavour. My go to game that runs on a potato is FTL. Brilliant design with a charming aesthetic. Sort of a tactical strategy Rougelike hybrid.

I think your best bet is to explore some of the classics of pc gaming. Some of my favorites are Deus Ex, Half Life, System Shock 2, Grim Fandango, or Vampire: The Masquerade – Bloodlines. All incredible games, but with spec requirements that any pc these days can meet. While these games haven't aged the best in terms of graphics, there are things about these games that are timeless. The original Deus Ex is my favorite game ever, there are things that it does that I haven't seen in any other games.
