A game being popular doesn't automatically make it popular in the speedrun community, nor guarantee it will be fun to watch for viewers. If it was as simple as you say, then why, despite Minecraft being around for so long, has speedrunning it only recently exploded in popularity? His demo of the process, showcasing all the elements involved in a successful run in 1.16, and explanation as to how that all likely ties into why it's currently so popular to speedrun, makes way more sense than your rather flippant "because it's a popular game", IMO.
