Onions have a biennial lifecycle: the bulb we buy at the store is at the end of the first year of growth. The second year of growth pulls energy from the bulb to produce flowers and seeds. Those seeds will grow into the bulb over the next year. So while you might get a nice plant, you won’t get new onions for 2 years.
