Songs With My Daughter is pretty much exactly what the name reads as. It's a man singing to his daughter.
There's a lot of original songs in these next ones as well, so you'll have to do some searching for covers specifically, but if you are a fan of fingerstyle guitar, these are some of my favorite channels.

Although one [candyrat artist] you didn't mention that I particularly enjoy is Gareth Pearson. That dude can fucking play and I especially love his Jackson 5 cover. Last year he was in Kingston, Ontario at the Canadian Guitar Festival (about 3 hours drive from me) and I really wanted to go but couldn't manage to make the trip. Sadly the festival is cancelled this year too, due to some zoning bylaw bullshit. :(

Also, KEXP's Pickathon is a veritable orgy of acoustic music every year, including a lot of bands doing acoustic that normally don't perform it very much. There's a ton of excellent stuff in there, like JD McPherson doing acoustic rockabilly.

Ever heard Marty O'Reilly & The Old Soul Orchestra? They have a very melancholy sound, traditional music for the first two records, but their new album is very strange, almost like a kind of prog-country hybrid. Not sure if I like it yet but at least it's a fresh kind of style, and I do love it when bands experiment.
I'm not familiar with their stuff, but I did check out a few things off YouTube. I'm not sure I'm much a fan. It just seems a bit too disorganized for my tastes.

<3 Pomplamoose, and even though he hasn't uploaded to it in ages, his original channel still has some of my all-time favorite coversongs and mashups. E.g. Panic at the Disco, Feel Good Inc, Radiohead / Chopin mashup, Green Day / Incubus Mashup, etc.
How he manages to be the CEO of Patreon and still find time to keep making so much music is a mystery to me... but I am sure glad he does!
