We had a bunch of hot peppers lying around, so I decided to ferment them and make a hot sauce. Hot sauce is something that I love, and I've never made a sauce before, but I know the sorts of things that I like, so I looked up a general "how do you ferment peppers" and didn't follow a recipe.

I got fermentation lids and mason jars, I got a nice salty brine going, and I cut up mostly one type of pepper, and put in about 1/4 of a peach as well, along with half of a complimentary pepper. I don't know the exact varieties that we have, but I mostly used a brighter, sweeter hot pepper, and then used about half of the smaller, spicier, smokier chilli peppers we have.

This may or may not work; I've been checking on it, and I think fermentation has started. I have to buy some weights to keep everything in the brine - I have a ziploc filled with brine holding it down right now.

My plan is to ferment for about 10 - 14 days, then test, blend, and add in a bit of brine and apple cider vinegar. I also plan on doing a quick cook of the sauce to stop fermentation; that's optional, but I don't want the bottles to explode in the fridge.

The dog I have been fostering for about a month and a half got adopted at the beginning of the week, but the adopter has already decided that it isn't going to work out since the dog is very reactive to other dogs (something that was made clear during the adoption process and he was perfectly fine with). I'm disappointed that his new home didn't work out, but I'm glad to have him around a little bit longer :)
I also stripped the oil drain plug on my bike while trying to do an oil change, so I'm going to have to take that in to a mechanic since I'm out of ideas for getting it loose :/

Stripping the oil plug is a huge pain in the ass to fix. It's one of those things that I would 100% of the time take to a garage to fix, and I'm fairly handy. Depending on what you did, you could drill it out but... no matter what it'll be tedious, and you'd probably end up having to buy new tools.

Longwinded way of saying that I certainly agree with taking that to a mechanic, even if you're quite handy and have ideas.

I was able to get the oil plug out yesterday! The bolt extractor actually worked without needing to take it to a shop :)

That's awesome! Is the replacement plug going back in all right?
