I made gnocchi with a pesto cashew cream sauce that turned out fantastic. I had previously made a plant-based pesto using fresh basil, olive oil, cashews instead of pine nuts, and nutritional yeast. For the cream sauce I blended up some raw cashews with boiling water, and added some fresh garlic, miso paste, salt, a bunch of the aforementioned pesto, and some more nutritional yeast. Tossed the cooked gnocchi with the sauce and then added some roasted asparagus on top. It was one of those meals where I tried to get creative with a bunch of stuff in my fridge and pantry, and it turned out super delicious.
