I only watched a couple episodes of the original RWBY. Is this a remake where I can start with no RWBY knowledge? Or is this something where its better to have seen the original?

As I know the first part is remake and later itʼd be not the same story as amerime. Therefore, as already been told here, you can watch without knowledge.

Shouldn't be an issue. It does a bit of the Brotherhood thing where it speeds through season 1 before it gets to where the story is set.
