Since I have been learning the Ukrainian language, I thought I would also explore their cuisine and make a few of their dishes this past week.
Deruni - very simple potato pancakes topped with sour cream. This was my favorite one because it was easy to make and tasty. But how could it not be? It's fried potato with sour cream. This is my new favorite thing to make for breakfast, completely replacing traditional American hash browns.
Holubtsi (stuffed cabbaged rolls) - pretty good and kept me set up for lunch for several days. I was surprised by how easy is was to roll the cabbage after boiling it for ~5 minutes. It makes me wonder about varying up the filling for my next go-around. I tried to adapt this recipe to the instant pot but I think I would have gotten much better flavor cooking in the oven.
Chicken Kiev - I had higher hopes for this recipe but I made a mistake slicing the chicken breast too open, effectively making it easy for the butter filling to seep out when frying the chicken. I may try this again with the more traditional recipe.
Okroshka - it has been hot for the past few weeks so I thought a cold soup would be great. This recipe doesn't really match anything that I have ever had on my palate so I'm not entirely sure what to make of it. I think I needed finer dicing and less cucumber. It tasted alright, but it wasn't something I craved. Maybe had I put it in a thermos and had it outside on a hot day that I may have enjoyed it more.
Right now I am chilling at a fast food chain restaurant called The Habit while I wait for service on a car. They are famous for their particularly greasy and messy burgers which I really did not want, so I ordered their fried chicken bites.
They’re not very good.
They use white meat, which I usually like, but in this case it’s over cooked and tough. But the worst thing is how the chicken is absolutely coated in this super thick and dry breading that probably makes a greater volume than the chicken does. This is probably why they gave me two giant cups full of sauce.
I wouldn’t say that they are terrible, but I did expect better.
