    It's always interesting to see what brews well and I'd love to try Ora jólabjór. I can imagine peas giving it a sweet, almost malty flavor and cabbage providing some earthy tones. I thought it would taste a bit like a skunky hefeweizen and was surprised to read they find it similar to an English bitter.

    I took a swing at a seaweed wine back in 2022 and I was surprised to see how well it turned out (not great but waaaaay better than expected). I've got 2 bottles I'm aging for another 6 months - 2 years in total - to see if they continue to improve. Fingers crossed we have a bit of this Icelandic luck!
