Nice stuff to make in an Instant Pot

Quite a lot of us will have them. They are pretty damn useful, and make for decent lazy meals.

Apart from stock, here is one of the recipes I really like for the IP.

Japanese pork belly slices. Works brilliantly and stunning flavour. In fact Just One Cookbook is generally a great site, but this was the first of theirs I tried. I make it every time my wife goes away as it's not her thing, but I love it.

    My favorite is risotto! It's so convenient to just press 7 minutes and be done instead of stir a pot for an hour.

        I was actually surprised with how well it did. I'm not sure how well it would work with the standard arborio rice you can find in most supermarkets, but I really like the results with the Carnaroli variety I've got right now.

          Carnaroli is my favourite too. I generally use the IP to make stock then make a risotto with it by hand. At this time of the year it has to be risotto primavera!

    This 5-ingredient Colombian chicken stew is one of my favourite pressure cooker recipes - I usually make it in my manual pressure cooker because it doesn't exactly work in the instant pot (at least not my 8-quart version) because it doesn't have enough liquid and the instant pot can sense it somehow (and screams BURN), but it can be remedied by substituting the tomatoes for a can of tomatoes with liquid.
    It's always amazing how delicious it is for such a tiny amount of ingredients!

    Honestly, the #1 thing I use my instant pot for by a mile is hard-boiled eggs. They are so fast and perfect and they peel like a dream!

    Also the instant pot makes killer carrot soups because the higher pressure means higher temperatures, which means you can caramelize the carrots. I've also used the pressure cooker to caramelize bananas before using them for banana bread, which didn't end up adding much to the bread, but the bananas themselves were delicious and would probably have been a boss icecream topping.
