While cooking dinner last night, I discovered that what I thought were sun-dried tomatoes... weren't that anymore. [No, they don't keep forever in the pantry - these were the last dregs of a package with a use-by date in 2015. Even though the package was tightly sealed, the tomatoes turned black and had a raisin-like flavor.]
A couple of tablespoons of tomato paste (1 Tbsp per 3 - 5 dried tomatoes called for in the recipe) were an adequate substitute.
