This is definitely the best video to explain why fallout 3 was so important. I started with the first but fallout 3, to me, is the pinnacle for reinvention. It's not the same yet it is and has so much more going on that Fallout 4 could not quite compete (though the gf don't hold up).
A remaster of Noah's first ever video, but its been so thoroughly changed up that I think that it's worth the watch if you like his videos.

Yup, with the exception of the Atomic Cafe clips at the beginning (which I recommend watching), the footage itself is mostly just gameplay.

I'm a big fan of Caldwlell-Gervais video essays on games. If you're a fan of immersive sims I highly recommend his videos about Prey and Dishonored
