Val Kilmer has always been one of my favorite actors. He's one of those actors that just has a chameleon like ability to disappear into roles.
I love a lot of the comedies he did when he was younger (Real Genius, while extremely problematic at points, is still one of my favorite movies) but he made some decent action films too. If you haven’t seen The Saint, I highly recommend it. It’s not a great movie but he gets to wear a bunch of disguises and do a bunch of silly accents.
I'm a fan of Kilmer too (though not of his idiotic Christian "Scientist" beliefs), so I will definitely second The Saint; It's flawed but fun. Kiss Kiss Bang Bang is Kilmer at his absolute peak...

Kiss Kiss Bang Bang is Kilmer at his absolute peak though, IMO. It's by far my favorite movie of his, and I can't recommend it enough. The Ghost and the Darkness is similarly up there for me too though.
Edit: Oh, and another one that not many people have probably seen is Spartan. It's understated and pretty dark, but incredibly tense and well worth watching, IMO.
