It's an adaptation of a famous Medieval Arthurian legend, Sir Gawain and the Green Knight.
Sir Gawain is King Arthur's nephew and accepts a challenge to swing his sword at the Green Knight in exchange for taking one in return a year later. Since the Green Knight lived despite having his head chopped off, Sir Gawain takes it as his knightly duty to fulfil his end of the bargain and track down the Green Knight to likely face his demise. The story is his journey to track down the Green Knight before the year is up.

p.s. If you enjoy slow-burn, psychological horror/thriller films and haven't seen any of A24's, I would highly recommend checking out Hereditary, The VVitch, The Lighthouse, Under the Skin, Green Room, Ex Machina, and The Blackcoat’s Daughter.

Ah yeah, I have seen Minari and that trailer definitely spoils the climax scene in the movie. That sucks that they included it.
