Neat. I have to wonder if the maintenance and cleaning of the machine outweighs the cost of just hiring cooks though.

If Mr Vardakostas is selling his burgers for half the prices (or less) of his competitors, he has to be saving money somewhere. He might be saving some money by having a smaller store and paying less rent ("The average restaurant is 50 percent bigger in terms of square footage."), but he's also paying more for the ingredients ("We spend more on our ingredients than any other burger restaurant.").

He has to be making most of his savings on wages - they're one of the highest costs to a fast-food restaurant (I know - I was in the industry for a few years, including in managerial roles). However, he's paying his employees more per hour than they would get elsewhere. Therefore, the biggest saving has to be in the number of hours his employees work, and the total number of those employees, despite him saying in the video that his restaurant has a decent-sized staff.

No matter how he dresses it up, he's automating yet another job and reducing employment opportunities. He might treat his employees nicer with his "5% time" (3 minutes per hour), but there are fewer of them.
