Saving money on all the streaming services I've cancelled and don't have to worry about shows I like suddenly disappearing.

I have this for over a year. I hae ripped around 300 DVDs and Blu rays myself to create my video library with tens of audio CD to have music library. Since then I keep buying physical media to enlarge my collection. Bonus is that I have public IP at friends house, so I can stream frm Jellyfin anywhere (via OpenVPN that I set up).

They wanted war, they got it!

I have also pirated a few films that are quite hard to get without paying quite a bit of money but trying to avoid that where I can.

Wireguard is my personal choice for VPN solution. It is free, open source and has a much better performance than OpenVPN. Might be worth looking into that.

I was going to start doing this and then kind of stalled out on the project.

I have an older machine to use, I'm working on setting up additional power and networking to my mechanical room to also use as a server room (I really need to finish this).

Where I'm failing at the moment is kind of having no idea what to do for storage. I think I need some sort of direct attached storage unit and I'm not wanting to spend the money on one (+ storage) and don't want to waste money buying the wrong thing or starting too small in terms of storage.

I have a media center PC attached to the living room TV that's always on so the hard drives just live in there - as I fill them up I buy more and bigger ones. Eventually, as the need arises I move the files to the bigger ones and replace the smaller ones.

The PC is always on anyway so there's no need to run a separate storage and since I already had the PC the only extra cost was SATA cables and drives.

I custom built my own home server. It is i5-4670 (or whatever) with GTX 750 for HW re-encoding. OS is Gentoo Linux on SSD and for storage I have 3x 4TB HDD (NAS type from WD and Seagate) in RAID5. I got 7,3TB this way for around 600€ (I had some parts already). It draws 50W (idling, which is kinda most of the time, because even streaming video from it actually doesn't load it...).

The best thing on this is that you can do with whatever you already own. If you have some old hardware, just add some HDDs and you are set to go. If you don't need redundancy, one big disk is perfectly fine. I run RAID because I also hae home folders on this server.

If you want HW re-encoding, get some old GPU, maybe GTX 1050 (non-Ti, 2GB are enough) as it can do even H265.

In terms of storage, I've got a 4TB NAS HDD drive for movies and music and a 6TB NAS HDD drive for TV Shows. The OS (Windows) is on a 256GB SSD.

I just leave it running 24/7 and the NAS drives are built for the sort of stresses that incurs like heat, vibrations etc. so they're a little more expensive than normal HDDs.

I don't have any redundancy set up but I'm not too fussed, if one of the drives dies, it's just my time to rip the films or TV shows of the DVDs again.

Ripping discs is not hard, and the "digital copy" you end up with is far more versatile than whatever DRM-infested crap you get on these services.
