*Rainbow Ratatouille
1 eggplant, cubed, salted, and drained
3 zucchinis or yellow summer squashes (I recommend mixing and matching), roughly chopped
1 purple onion, diced
1 green bell pepper, diced
1 orange or small red bell pepper, diced
2 tomatoes, chopped
2-3 cloves garlic, minced
1 can crushed tomatoes undrained
1 cup of water
2 tsp herbs de Provence (or Italian seasoning)
Olive oil
Salt and pepper to taste
- Sautee each of the first seven ingredients in olive oil to get a little color on them. Add them all to one bowl as you finish, giving their flavors a chance to merge.
- Add them all back into the pot, along with another two TBs of olive oil, the herbs, the crushed tomatoes, and if necessary the water. Bring to a boil, then simmer until it reaches a nice stew-like consistency-- perhaps half an hour to forty minutes.
- Serve over... damn, it's good on a lot of things, but if I was going with a vegan option I'd suggest polenta. You could even complete the rainbow by getting blue corn, if you like. It's better the second day, like many stews.

If this site can run a respectful, mature political discussion, I'll be astounded and pleased.

LibraryLass I think they're saying that there's no need to euphemize, "masculine-normative and therefore problematic" is just a diplomatic way of saying "sexist."I think they're saying that there's no need to euphemize, "masculine-normative and therefore problematic" is just a diplomatic way of saying "sexist."

LibraryLass I don't agree that we have done either of these, and I don't feel comfortable being referred to as either one.the plural form, "you guys" is already neutered. I can walk up to a group of women and ask "How're you guys doing?" and it doesn't draw any ire
we've similarly neutered "dude" in both the singular and plural, but it's especially casual and almost familiar

I love Cloud Atlas!
