We had our Belizean friends come up and visit a few weeks ago and they showed us how to make fry jacks. For the unfamiliar like us they are like a puffy fried dough that is just delicious. We decided to try our hand at making some on our own this weekend and they came out pretty good. They weren't as light and fluffy but still damn tasty. On top of that some of our neighbors had moved a few weeks ago and gave us pounds and pounds of frozen shrimp so we bbqed those up Caribbean style in a lime/chili/ginger/cilantro marinade (that recipe with a quarter cup of lime and the zest of a lime added) with a coleslaw that had a pickled radish base. It was a divine combo.

The evening before we had some friends over and made Ramos Gin Fizzes. As it turns out it takes a tooooon of shaking. We had a total of 8 people and it took passing each shaker around for everyone to have a turn to get a really nice foam tower out the top of the glass. Very nice recipe, will definitely drink again.

The only tough part was shaking it and as we drank the shaking got all the more fun. I had an amazing Ramos Gin Fizz with 2 of the friends that attended at a speak easy in San Diego pre-pandemic that knocked everyone's socks off. We talked about it pretty frequently so when I saw it on HTD it seemed somewhat approachable.

Heh. Effort is relative, I guess. Half the time I can barely muster up enough motivation to cut/squeeze some fresh lime for my Mules. So shaking for X minutes to make a Ramos is definitely out of...
